Power Bars

As promised, the recipe:

1 cup peanut butter (or any nut butter)
1/2 cup honey
1/4 tsp vanilla extract
1/3 cup sunflower seeds
2/3 cup dried cranberries (or any dried fruit)
3 tbsp sesame seeds
1/3 cup chocolate chips (optional)
2 cups puffed brown rice cereal

1. Grease an 8×8 pan with cooking spray.
2. In a large bowl, mix together peanut butter, honey and vanilla extract until well-combined.
3. Add sunflower seeds, dried fruit, sesame seeds and chocolate chips and combine thoroughly with the peanut butter mixture.
4. Gradually add the puffed brown rice cereal.
5. Firmly press the mixture into the prepared 8×8 pan; you may need to use your hands and get messy (wet hands slightly).
6. Cover and refrigerate for a couple of hours then cut into squares.

Looks great! Do you think oatmeal would work instead of the cereal?
